Basic Bean Recipe
(1 lb (2 cups) dry beans will yield 6 cups cooked).

Methods:
1. Wash and sort beans.
2. Add beans to 6 cups boiling water.
3. Boil 2 minutes, remove from heat.
4. Cover and let stand 1 hour.

1. Or soak overnight in 6 cups cold water).
2. Simmer 1 1/2 to 2 hours until tender.

Greg Heinz Baked Bean Recipe

(This will serve 25 people)
Ingredients:
1 gallon Great Northern beans in tomato sauce
1/4 lb bacon, chopped
1 onion, chopped
1/4 bag brown sugar
4 oz. dark molasses
2 Tbsp. dry mustard

Preparation:
Saute` onion and bacon until onion is clear. Transfer to slow cooker and add beans and tomato sauce, brown sugar, molasses and dry mustard. Simmer on low heat (250 degrees) until mixture changes from reddish color to carmelized color.
